Thanksgiving is one of our favorite holidays. It’s a fabulous time to come together with family and friends to reflect on all of things you are grateful for. And we are certainly grateful for Chef Kyla and the many delicious gluten free meals that she makes for our campers with gluten allergies and sensitivities!
We asked Chef Kyla if she could share some of her favorite Thanksgiving recipes, and especially those that are gluten free and peanut or tree nut free. She was kind enough to provide us with her recipe for Cranberry Sauce with Port and Fruit, and for Sweet Potatoes with Black Beans. Scroll down for both delicious GF recipes.
Preparing meals for campers with food allergies and sensitivities Chef Kyla has her own set of purple kitchen utensils to make sure there is never any cross contimination!
CRANBERRY SAUCE WITH PORT AND FRUIT
Makes ~ 3 1/2 cups
- 1 2/3 cup of Ruby Port
- 1/4 cup balsamic vinegar
- 1/4 cup packed brown sugar
- 8 dried mission figs, stemmed & chopped
- 1/4 teaspoon ground black pepper
- 1 apple, cored & medium dice
- Zest of one orange
- Meat of one orange, roughly chopped
- 1 teaspoon freshly grated ginger
- 3/4 cup sugar
- 1 12-ounce bag of fresh or frozen cranberries
Combine the first 9 ingredients in medium saucepan. Bring to boil, stirring until the sugar dissolves. Reduce heat to low and simmer for 10 minutes. Discard the rosemary. Mix in cranberries and 3/4 cup sugar. Cook over medium heat until liquid is slightly reduced and berries burst, stirring occasionally, about 6 minutes. Cool. Transfer sauce to bowl; chill until cold.
